Virgin Mojito

wonderful drink for summers.

About 10 mint leaves
1 tbsp. sugar
1/2 tbsp. lime juice
Ginger ale/club soda/sprite
Crushed or cubed ice

Method
Shred the mint leaves with hands.Add the sugar and lime juice.
Pour the soda. Stir well.

Home made Sizzler

you will need:Iron tawa
1 onion, sliced
2 tomatoes, chopped finely
1 carrot
1 potato, boiled & cut in 4 pcs.
½ cup peas
½ green pepper, chopped roughly
½ yellow pepper, chopped roughly
½ cup cauliflower florets
½ cup french beans
2-3 cabbage leafs
1 cup boiled spaghetti or cooked rice (as per your choice)
2 tbsp. tomato ketchup
3 tbsp. oil
½ tsp. red chili pwd.
Salt to taste
1 tbsp. ccoriander leaves, chopped
1 tsp. white vinegar

Method:
Snip off the ends of the french beans. Do not cut any further.
Cut carrots lengthwise. Put to boil carrots, cauliflower florets, peas, french beans with some salt. Drain the vegies out in a colander in 2-3 mins. Remember not to overcook.
Put the iron tawa to heat-up.
In a wok, heat oil, add the onions. Saute till golden brown then add the tomatoes. Saute till the tomatoes become watery, then add the boiled vegies. Add salt, red chili pwd and ketchup. Stir well. Keep aside and add coriander leaves.
In another pan, heat 1 tbsp oil, add the peppers and saute for a minute. Toss in the potato pieces and add salt. Saute for a minute. Remove from flame.
Now take the 2 cabbage leaves and lay them evenly on the hot tawa. Pour the cooked vegies on one side. Next to it put the rice/ spaghetti. Then the potato and pepper.
Turn off the flame. Before serving sprinkle the vinegar over the tawa for the sizzling steamy effect and serve..



Tip: To serve, you can place the tawa on a wooden chopping board on the table.

Simple saucy spaghetti



(I used the wholemeal spaghetti) (serves 2)



Spaghetti 100gms
Oil 2 tbsp.
Garlic, crushed & chopped 2 pods
Green chilies, slit 2
Onion, sliced 2
Tomatoes, sliced 2
Green pepper, sliced thinly ½
Crushed red chilies (optional) ½ tsp.
Tomato kecthup 2tbsp.


1. Boil 5 cups water and add salt. When it come to boil, add the spaghetti and a couple drops of oil. When done, drain in a colander and hold it under running water and separate with your hands. Keep aside.
2. Heat oil in a wok, add garlic an d stir till it turns golden brown. Add the sliced onions and green chilies. Stir fry for 2 minutes.
3. Add the sliced tomatoes and pepper. Stir occasionaly until the tomatoes become tender.
4. Sprinkle the crushed red chilies, salt to taste and ketchup. (Don’t forget that you added salt to the spaghetti while boiling). Mix well.
5. Add the spaghetti and toss.
6. If you don’t like it very dry, add ½ cup water and bring to boil.
7. Have it hot with garlic bread or without!!



Baby corn & Okra


This is one simple recipe for low carb diets or if you are looking for a light meal..

(serves 2)
Oil 2 tbsp.
Onion seeds ¼ tsp.
Fennel seeds ½ tsp.
Mustard seeds ¼ tsp.
Garlic , shredded 1 pod
Red chili, crushed 2
Onions, sliced 2 medium
Okra, slit in half 250 gms.
Baby corn, slit in half 100 gms.
Tomatoes, deseeded & sliced 1
Green chili, slit 2
Lemon juice 1 tbsp.
Coriander, chopped 1 tbsp.

1.Boil the babycorn in some salt water. Poke them with a knife and check. When they’re tender, toss in a colander and let it cool.
2.Heat oil in a wok, add the onion seeds, fennel seeds and mustard seeds. When they crackle, add the shredded garlic and crushed red chilies. Cook for a bit and toss in the sliced onion.
3.Stir fry till golden brown. Add the split okra and let it cook until the okra is tender.
4.Add baby corn, green chilies, lemon juice, salt to taste (remember babycorn has some salt).
5.Stir fry for 1-2 minutes and top up with sliced tomatoes and coriander!!
